If you’re a fan of sourdough bread, why not extend the magic to breakfast? Sourdough pancakes are a fantastic way to use up your sourdough starter discard, resulting in fluffy, tangy pancakes that are perfect for mornings. Packed with flavor and made from simple ingredients, they’re a delightful treat the whole family will love.

Here’s a step-by-step guide to creating these breakfast favorites!

Ingredients

For the Overnight Sponge:

  • 1 cup sourdough starter discard (unfed)

  • 1 cup all-purpose flour

  • 1 cup milk

For the Pancakes:

  • 2 large eggs

  • 2 tablespoons sugar

  • 2 tablespoons melted butter or oil

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract (optional)

Instructions

1. Prepare the Overnight Sponge

  1. Combine the sourdough starter discard, flour, and milk in a large mixing bowl. Stir until well mixed.

  2. Cover the bowl with plastic wrap or a clean kitchen towel and let it sit at room temperature overnight (8-12 hours). This step allows the mixture to ferment slightly, enhancing the flavor and texture of your pancakes.

2. Make the Pancake Batter

  1. In the morning, whisk the eggs, sugar, melted butter (or oil), and vanilla extract (if using) into the overnight sponge.

  2. Sprinkle the baking soda and salt over the batter, then gently stir to combine. The batter will become light and airy as the baking soda reacts with the fermented starter.

3. Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

  2. Pour 1/4 cup of batter onto the skillet for each pancake. Spread the batter slightly with the back of a spoon if needed.

  3. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for 1-2 minutes, until golden brown on both sides.

4. Serve and Enjoy

Stack your pancakes high and serve them warm with your favorite toppings, such as maple syrup, fresh fruit, whipped cream, or a dusting of powdered sugar.

Why Use Sourdough Starter?

Sourdough starter adds a subtle tanginess to your pancakes, making them uniquely flavorful. Plus, it’s a great way to avoid wasting starter discard while incorporating sourdough's probiotics and natural fermentation benefits into your breakfast.

Tips for Perfect Sourdough Pancakes

  1. Don’t Overmix: Once you add the baking soda, stir gently to maintain the batter’s fluffiness.

  2. Preheat the Skillet: A properly heated skillet ensures even cooking and prevents sticking.

  3. Adjust Consistency: If the batter is too thick, add a splash of milk. If it’s too thin, add a spoonful of flour.

Sourdough pancakes are a delicious and creative way to start your day. Whether you’re looking to use up your starter discard or simply want to try something new, this recipe is sure to become a breakfast favorite.
